Creamy Sausage & Peppers with Mashed Potatoes

This Creamy Sausage and Peppers is an easy, comforting dinner filled with browned sausage, peppers, onions, and a creamy tomato sauce. I love serving it over a big helping of mashed potatoes with freshly grated Parmesan on top. Start your potatoes first, and the rest of dinner comes together while they're cooking.

Ingredients

  • 1 lb Italian sausage links
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 1 yellow onion, sliced
  • 1–2 tablespoons olive oil
  • 2 tablespoons white cooking wine
  • 1 can (14.5 oz.) fire-roasted diced tomatoes
  • 1 can (6 oz.) tomato paste
  • 1 can (8 oz.) tomato sauce
  • 12 oz. water
  • ½ teaspoon Italian seasoning
  • 1 teaspoon granulated sugar
  • Salt and black pepper, to taste
  • ⅓ cup heavy cream
  • Freshly grated Parmesan, for serving
  • Mashed potatoes, for serving

Instructions

  1. Start the mashed potatoes first so they're ready when the sausage and peppers are finished.
  2. Heat a large skillet or Dutch oven over medium heat. Add the sausage links and brown well on all sides. They don't need to be completely cooked through at this point.
  3. Remove the sausage from the pan and allow it to cool just enough to handle. Cut into approximately ¼-inch slices and set aside.
  4. Add a little olive oil to the same pan. Add the green pepper, red onion, and yellow onion. Sauté until they begin to soften but still have a little texture.
  5. Return the sliced sausage to the pan.
  6. Add the cooking wine and stir, scraping up any browned bits from the bottom of the pan.
  7. Add the fire-roasted tomatoes, tomato paste, tomato sauce, and water. Stir until everything is well combined.
  8. Add the Italian seasoning, sugar, salt, and pepper.
  9. Stir in the heavy cream and bring the mixture just to a gentle boil.
  10. Reduce the heat to low and simmer for about 10 minutes, stirring occasionally, until the sausage is completely cooked and the sauce has thickened slightly.
  11. Spoon the creamy sausage and peppers generously over warm mashed potatoes.
  12. Finish with plenty of freshly grated Parmesan and serve warm.

Notes

Make sure to start your potatoes before you begin the sausage and peppers. Once everything starts going into the skillet, this recipe comes together pretty quickly, and I like having the mashed potatoes hot and ready when the sauce is finished.
