Ham, Cheddar & Chive Quiche

Ham, Cheddar & Chive Quiche

This homemade ham, cheddar, and chive quiche is one of those simple recipes that's perfect for breakfast, brunch, or even an easy dinner. With fluffy eggs, rich heavy cream, savory diced ham, sharp cheddar cheese, and fresh chives, every bite is full of flavor.

I love recipes that use ingredients I already have in the refrigerator, and this is a great way to use up leftover ham. Serve it with fresh fruit, a simple salad, or enjoy a slice all on its own!

Ingredients

  • 1 unbaked 9-inch pie crust
  • 6 large eggs
  • 1 cup heavy whipping cream
  • 1½ cups shredded sharp cheddar cheese
  • 1 cup cooked ham, diced
  • 2 tablespoons fresh chives, finely chopped
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Place the pie crust into a 9-inch pie dish and gently press it into the bottom and sides. Crimp the edges as desired.
  3. In a large mixing bowl, whisk together the 6 eggs and heavy cream until smooth and well combined.
  4. Add the salt, black pepper, and garlic powder, if using, and whisk again.
  5. Sprinkle the diced ham evenly over the bottom of the pie crust.
  6. Add the shredded cheddar cheese and chopped fresh chives, distributing them evenly over the ham.
  7. Slowly pour the egg and cream mixture over the filling, allowing it to settle between the ingredients.
  8. Place the quiche on the center rack of the preheated oven and bake for approximately 40–45 minutes, or until the center is set and the top is lightly golden. The center should reach 160°F.
  9. Remove from the oven and allow the quiche to rest for 10 minutes before slicing.
  10. Slice and serve warm, or refrigerate leftovers for another meal.

Notes

Most quiche recipes call for five eggs, but I like using six! It gives the quiche a little more substance while still keeping that soft, creamy texture.

I also love using sharp cheddar because it adds so much flavor, especially with the diced ham and fresh chives. If you have leftover holiday ham, this is a wonderful way to use it up.

And don't feel like quiche is just for breakfast. It's just as delicious for lunch or dinner!
