Oven Roasted Zucchini

This is one of my all time favorite ways to eat zucchini. Once the zucchini starts coming out of the garden in the summer, I make this almost daily. It couldn't be easier, fresh garden zucchini, avocado oil, and a few simple seasonings roasted until tender and golden around the edges.
Ingredients
- 3–4 medium fresh zucchini
- 2 tablespoons avocado oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- ½ teaspoon sea salt, or to taste
- ¼ teaspoon black pepper, or to taste
Instructions
- Preheat the oven to 425°F. Line a large sheet pan with parchment paper.
- Wash and dry the zucchini. Trim off the ends and slice each zucchini lengthwise, then cut the long pieces into manageable spears or wedges if needed.
- Arrange the zucchini on the parchment-lined sheet pan.
- Drizzle with avocado oil and toss until lightly coated.
- Sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss again to evenly distribute the seasonings.
- Arrange the zucchini in a single layer, leaving a little room between the pieces. This helps them roast instead of steam.
- Roast at 425°F for 20–25 minutes, turning once if desired, until tender and lightly golden around the edges.
- Serve immediately while hot.
Notes
Don't overthink this one. This is truly one of the simplest things I make, and it's also one of my favorites. During zucchini season, when we're bringing fresh zucchini in from the garden, I make this almost every day.
You can also change up the seasonings depending on what you're serving it with. The avocado oil, salt, pepper, and a few simple spices are really all fresh garden zucchini needs.
