Chocolate Zucchini Bread

Rich, chocolatey, and incredibly moist, this Chocolate Zucchini Bread is one of those recipes that tastes much more like chocolate cake than zucchini bread. It’s an easy way to use up fresh zucchini from the garden, and the chocolate chips make it extra good.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup unsalted butter, melted and slightly cooled
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded zucchini
- 1 cup semisweet chocolate chips, divided
Instructions
- Preheat the oven to 350°F. Lightly grease a 9 x 5-inch loaf pan and set aside.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, whisk together the eggs, melted butter, brown sugar, and vanilla until well combined.
- Add the dry ingredients to the wet ingredients and gently stir just until combined. Be careful not to overmix.
- Fold in the shredded zucchini, followed by 3/4 cup of the chocolate chips.
- Spread the batter evenly into the prepared loaf pan. Sprinkle the remaining 1/4 cup chocolate chips over the top.
- Bake for 50–60 minutes, or until a toothpick inserted near the center comes out without wet batter. A little melted chocolate on the toothpick is perfectly fine.
- Let the bread cool in the pan for about 15 minutes, then carefully remove it and transfer it to a cooling rack.
- Let cool until slightly warm, then slice and enjoy.
Notes
Storing: Keep the bread covered at room temperature for up to 4 days. It can also be wrapped well and frozen for up to 3 months.
A Note from Jessica
There’s no need to peel the zucchini before shredding it. I also like to keep recipes like this simple, so I use melted butter instead of adding another type of oil. The zucchini keeps the bread wonderfully moist without making it taste like zucchini.
