These classic no bake cookies are one of those simple recipes that never goes out of style. Rich chocolate, creamy peanut butter, and hearty oats come together in just a few minutes, and there’s no need to turn on the oven. They’re perfect when you want something sweet without a lot of fuss.
Ingredients
- 1/2 cup butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- Pinch of salt
Instructions
- I like to start by melting the butter just a little bit in a medium saucepan before adding the other ingredients. It helps everything come together a little easier.
- Add the sugar, milk, cocoa powder, and salt to the saucepan with the butter. Heat over medium heat, stirring as the butter finishes melting and everything is well combined.
- Bring the mixture to a full rolling boil. Once it reaches a full boil, let it boil for 1 minute, stirring occasionally.
- Remove the saucepan from the heat and immediately stir in the peanut butter and vanilla until smooth and well combined.
- Add the quick-cooking oats and stir until all of the oats are completely coated in the chocolate mixture.
- Working quickly, drop spoonfuls of the mixture onto parchment or wax paper.
- Let the cookies cool at room temperature until completely set, about 20–30 minutes.

Tip from Jessica: The boiling time makes a big difference with no bake cookies. Start your one-minute timer once the mixture reaches a full rolling boil. If they don’t boil long enough, they may not set; if they boil too long, they can turn out dry and crumbly.
